“Chop! Chop!”; quick pasta salad recipe for time crunched teens

This simple recipe is a nutritious alternative to many traditional school lunch foods and can be whipped up last minute. Requiring only basic kitchen skills – chopping for the most part – it is a quick fix for a hungry teen who’s always on the go.

 

Simply leave the pasta cooking while you do your homework, leave it in the refrigerator overnight and mix up all the ingredients in the morning for a fresh, delicious lunch. The blend of crunchy broccoli with soft pasta makes for a satisfying texture combination and the bits of tomato add a natural splash of flavor. Enjoy!

 

Ingredients:

  • 1 pound whole grain pasta
  • 3 cups of finely chopped broccoli
  • 2 chopped tomatoes
  • 1 cup of chopped spinach
  • ¾ cups grated Parmesan cheese
  • 1 cups of Italian or ranch dressing

Serves 8

 

Directions:

  1. Boil and drain the pasta.
  2. Prepare ingredients and store in refrigerator overnight.
  3. For maximum freshness, mix all of the ingredients together in the morning.
  4. Serve cold and enjoy.
