Easy DIY fall recipe: Nothing cheesy about tasty chicken casserole dish

The fall season is best known for Thanksgiving and all the delicious meals that come with it.

The following easy chicken casserole recipe takes one hour to make and includes chicken, baked zucchini, delicious italian bread crumbs, as well as mozzarella cheese. This is one of my favorite meals that my mom makes when fall season rolls around.

 

Ingredients:

 

  1. 3 cloves of garlic
  2. 2 green zucchini
  3. 2 yellow summer squash
  4. 1 red bell pepper
  5. ¼ cup of chopped and fresh basil leaves
  6. 1 pound of boneless chicken (you can cut it to your prefered size)
  7. 6 tbsp. of melted butter
  8. 1 cup of italian bread crumbs
  9. ½ pound of shredded mozzarella cheese (¾ cup)

 

Instructions:

 

  1. Preheat oven to 400*
  2. Chops veggies and herbs into a bowl
  3. Crush your garlic and add it to the vegetable bowl
  4. Chop your boneless, skinless chicken breasts into chunks and add to bowl of veggies
  5. Melt butter and add the butter and breadcrumbs into bowl
  6. Mix well and pour it into your pre-sprayed baking pan (I suggest to spray with Pam)
  7. Bake uncovered for 30 minutes
  8. Remove from oven and add shredded mozzarella cheese
  9. Return to oven to bake for 10 more minutes
  10. Make sure to check that chicken is fully cooked and cheese is melted perfectly before you serve
  11. Enjoy!
