Del Angel shares recipes for healthier school lunch eating

If you’ve gone to public school for any amount of time in your life, then you have probably heard or witnessed quite a few treacherous stories about the food being served in the lunch line. Rats in the ice chest, hair in the food, extra fat in your beans. Don’t take these quite so literally, for they are the fables passed on from generation to generation of students.

Nevertheless, I’ve got a few simple and quick recipes that I’ve interpreted myself and found on the internet to spice up your lunch if you find yourself wanting to eat a little bit healthier and away from the school lunch line.

Pinwheel Mini Sandwiches 

What you need:
Flour tortillas
Mayonnaise (optional)
Yellow mustard (optional)
Cheese singles
Sliced ham or turkey
Lettuce

What to do:

  • Take your tortilla and spread the mayo and mustard on it; top it off with your choice of meat and lettuce.
  • Roll up the tortilla tightly and then slice into desired portions, toothpicks are recommended to keep the spirals secure.

Avocado Pocket Sandwich (As interpreted through home cooking on about.com)

What you need:

1 avocado, halved and peeled
1/2 cup chopped cucumber
1/2 cup chopped carrot
1/2 cup chopped cauliflower
1/2 cup sliced mushrooms
1/2 cup cubed Monterey Jack cheese
1/4 cup bottled Italian dressing
4 pita breads
1 teaspoon lemon juice
1/2 cup chopped tomato

What to do:

  • Dice half the avocado. Reserve other half.
  • Gently toss diced avocado, cucumber, carrot, cauliflower, mushrooms, and cheese with Italian dressing.
  • Slit pita breads and separate halfway around by pulling edges apart to form a pocket. Fill each with 1/4 of the mixture.
  • Mash remaining avocado with fork and stir in lemon juice and tomato. Spoon inside each sandwich.

Yield: 4 pocket sandwiches
