Pumpkin chocolate chip muffins add festive spice for fall season

Junior Abby Middleton spreads the love throughout Coppell High School by sharing her festive and delicious pumpkin chocolate chip muffins. On Friday, tweets went out image (9)and pretty soon word spread, Middleton had muffins worth trying.

“My mom is the baker in the family, so she made the muffins,” Middleton said. “She made a ton so I just thought some people from school would like some.”

Pretty soon, a lot of people were coming up to Middleton telling her they heard she brought good muffins to school and asked if they could have one.

“It was awesome how everyone loved them enough to tell people about them,” Middleton said.

Middleton found the recipe on food.com, originating from CaymanDesigns.

Ingredients:

4 eggs

2 cups sugar

(16 ounces) canned pumpkins

1 teaspoon vanilla extract

¼ cups vegetable oil

3 cups flour

2 teaspoons baking soda

2 teaspoons baking powder

1 teaspoon salt

12 ounces semi-sweet chocolate chips

 Directions:

1.       In large mixing bowl, beat eggs, sugar, pumpkin, vanilla and oil until smooth

2.       Mix dry ingredients together then mix into pumpkin mixture. Add in chocolate chips

3.       Fill greased or paper-lined muffin cups ¾ full

4.       Bake at 400 degrees Fahrenheit for 20 minutes.
